The new barrel brand marketed by Tonnellerie Saury is earning a place of choice in the cellars of some of the greatest vineyards in France and across Europe. Here’s why.

The initial feedback has been extremely encouraging, with a promising future ahead. In Burgundy, Tonnellerie des Clos performs particularly well with Pinot Noir and Chardonnay grape varieties: “Winegrowers find our barrels highly respectful of the fresh and mineral profiles of their wines.”
Medium-Long Toasting for Chardonnays
The first tastings revealed the full potential of Tonnellerie des Clos barrels and confirmed the expected results. “We work extensively with medium-long toast levels, which bring delicate notes of toasted bread and hazelnut to Chardonnay, with a very subtle toast character on the nose, sometimes accompanied by hints of nutmeg or white pepper. We are in the realm of fine spices, which immediately provide aromatic freshness from the very first nose. On the palate, medium-long toast adds volume and roundness, particularly through the mid-palate, while maintaining a lightly toasted and spicy backbone on the finish. This profile perfectly suits Burgundy’s saline terroirs. The combination creates long, mouthwatering finishes.”


Pinot Noir in Burgundy
Pinot Noir, the emblematic red grape variety of Burgundy, produces elegant wines with relatively light colour, yet remarkable finesse and aromas of red fruits. It is a grape variety appreciated for both its delicacy and complexity. “With Pinot Noir, depending on phenolic ripeness and berry concentration, we move between medium and medium-long toast levels, which nourish the mid-palate and provide very gentle oak integration, especially during the first months. The very fine grain of Tonnellerie des Clos barrels leads to rapid tannin polymerization, offering a refined texture while supporting the typical structure and identity of each terroir.”
In the village of Saint-Romain, for example, Pinot Noir retains the freshness characteristic of limestone soils rich in marl, while the oak barrel ellagitannins integrate quickly with the wine tannins during ageing. In Pommard wines, medium toast highlights the verticality and generosity of certain terroirs, with silky textures through the mid-palate and finishes that remain subtle, marked by hints of clove and restrained toast.

Other Regions, Other Grape Varieties
Tonnellerie des Clos also adapts to other grape varieties, particularly Syrah from the Northern Rhône Valley, where winegrowers greatly appreciate the profile of our barrels. “In Côte-Rôtie, I received very convincing feedback on the 2025 vintage, with medium+ toast paired with concentrated Syrahs: the spicy notes combine beautifully with the naturally floral and peppery character of Syrahs from both Côte Brune and Côte Blonde. Our barrels support the wines through juicy black fruit profiles, creamy mid-palate textures, and highly savoury tannic structures, thanks to fine and elongated tannin chains.”
Elsewhere in Europe
Sur le célèbre cépage Blaufränkisch du Burgenland, en Autriche, les fûts de Tonnellerie des Clos respectent la délicatesse de ce cépage sur les terroirs argilo-calcaires. « Avec une chauffe légère longue on préserve les notes de fruits rouges de cerise et de framboise, tout en mûrissant parfois un peu ces fruits des bois, en allant sur des notes de mûre. Le toast au nez est discret, avec ce léger grillé presque réducteur au nez, des bouches généreuses, apportant de la complexité et de la longueur sur les finales, qui restent sapides et salivantes, fidèles à la signature de Tonnellerie des Clos ».
